Zesty summer soup from your blender! Combine equal parts watermelon and tomatoes (450g each), 1 cup chopped cucumber, 2 slices red onion, 2/3 cup chopped celery, lemon juice, olive oil, and salt and pepper to taste. Garnish with diced watermelon, celery, cucumber, mint leaves and olive oil.

Coat the watermelon slices with a honey, lemon and olive oil dressing balanced to taste before and after they are marked on the grill. The grilled melon stacks nicely with sliced feta, whole basil leaves and a sprinkling of toasted pistachios.

This playful dessert has a grown-up sensibility perfect for summer parties. Melt 70% dark chocolate in a bowl over simmering water. Pop watermelon slices into the freezer for 15 minutes. Dip the icy watermelon into the chocolate after it cools to room temperature. Sprinkle with sea salt.

Spicy and thirst-quenching, this watermelon salsa pairs perfectly with meaty fish. Two cups diced watermelon, 1 cup chopped cucumber, 1 minced Serrano (green) chilli, 1/3 cup chopped coriander, fresh lime juice and sea salt to taste.

This fresh take on watermelon salad features toasted mustard seeds and goat cheese with fresh mint. Other variations: feta cheese, black olives, wild arugula, toasted pumpkin seeds or blueberries. Olive oil, lemon juice, sea salt and ground pepper to taste.

Purée and strain watermelon to get four cups of juice. Whisk in 6 tablespoons of cornstarch, add two cinnamon sticks and a dash of vanilla extract. Slowly bring to a boil, stirring until thickened. Remove cinnamon sticks and chill in a serving bowl. Once firm, decorate with chocolate chips, jasmine flowers, candied fruit peel and crushed pistachios.
